Manassas Health Inspections: 21 Violations At 1 Restaurant

Several restaurants around the Manassas area recorded violations during recent inspections from the county health department.

MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Nov. 22 and Nov. 28.

COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Bonchon, 7344 Atlas Walk Way Gainesville, VA 20155
    • Date inspected: Nov. 27
    • Total violations: 16
      • Employees in the facility were handling raw chicken with gloves then going to work with ready to eat foods without washing hands and changing gloves, The employee was unable to answer questions about cooling of chicken and room temp rice.
      • There was not a designated person in charge.
      • Employees were working with raw food products then going work with ready t o eat foods without washing hands, there was rice left out overnight on the counter, also no employee could answer the information about cooling of chicken that was out on the racks.
      • There was not a valid person in the establishment with a certified food protection manager certificate
      • There was no verifiable employee health policy was not available at the time of the inspection.
      • There was no procedure available during the inspection to show how to clean vomit and diarrhea.
      • There was an employee observed washing hands at the prep sink.
      • An employee was rinsing hands with gloves on and switching tasks.
      • There were no individual towels at the hand sink in the kitchen next to the 3 compartment sink.
      • There were rags and food and debris in the hand sink next to the 3 compartment sink.
      • A pot of cooked rice was temped at 65F, left out on the counter overnight.
      • An employee was observed working with food without a proper hair restraint on.
      • There was a container of room temperature water that held spoons for scooping rice.
      • Wooden spoons were being used as cooking utensils.
      • There was a bucket of eating utensils and cups in the female bathroom.
      • The floor under the floor drains is not easily cleanable nor was it sealed or finished.

    • Date inspected: Nov. 28
    • Total violations: 21
      • Employees and conditional employees are not aware of the reporting procedures concerning information about their health and activities if they are suspected of causing, or being exposed to a confirmed disease outbreak caused by Typhoid fever (caused by Salmonella Typhi), Salmonella (nontyphoidal), Shigella spp., Shiga toxin-producing Escherichia coli, Hepatitis A virus or Norovirus.
      • Open drinking container such a cup containing drinking coffee stored in a manner that may contaminate food, food contact surfaces or utensils.
      • No disposable towels were provided at the hand washing lavatory located next to the prep sink at the start of the inspection.
      • The handwashing sink was observed being used as a storage for purposes other than handwashing.
      • No parasite destruction records maintained for raw, raw marinated, partially cooked or marinated-partially cooked fish that are served or sold in ready-to-eat form.
      • Observed a cup dispenser stored inside the cooked beans container.
      • Raw animal [products] such as raw eggs food holding in a manner that may cause cross contamination of to ready-to-eat food (RTE).
      • Observed the cutting board and the prep sink were dirty.
      • Observed cooked beef, cooked chicken hot holding at improper temperatures.
      • Diced tomatoes, raw tomatoes, raw tilapia, calamari, shrimp, observed at cold holding at improper temperatures.
      • The prepared ready-to-eat (RTE) cooked beans, and chicken containers in the refrigeration unit were not date marked.
      • The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without a reminder statement: sunny side eggs, tilapia, and ceviche.
      • Observed containers of chemicals such as bleach stored on the floor next to bags of rice.
      • The Person in Charge could not provide a food temperature measuring device.
      • Observed condiments and sauces bottles without a name to identify, not properly labeled.
      • Observed yuca uncovered during preparation.
      • Wiping cloths improperly stored between use.
      • in-use utensils and/or dispensing utensils observed improperly stored such as spoon to scoop rice stored in water next to the cooked rice container.
      • Observed condiment containers are dirty on the exterior.
      • Mops not hung up to air dry.
      • Observed missing light bulbs on the hood system.
