Manassas Health Inspections: 23 Violations At 1 Restaurant
The Prince William Health District recorded violations at several facilities around Manassas and Gainesville during recent inspections.
MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between March 29 and April 4.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- There were food items, ingredients in nonfood grade containers in throughout the facility.
- Clean linen were observed on a shelf that was directly beside the dirty dish area/3 compartment sink. This setup has the linen that it could be soiled by debris.
- The glaze station that was not in current use was covered in foil, also the walk in cooler floor was lined with flattened cardboard boxes.

- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- The following cooked potentially hazardous foods are not being adequately cooled from 135°F to 70°F within 2 hours and to 41°F within a total of 6 hours: fried chicken prepared the day before has been cooling for greater than 12 hours in the reach in prep cooler observed at 50°F.
- Observed sliced tomatoes (45*F) prepared raw beef (45*F) and cooked chicken (52*F) cold holding at improper temperatures.
- The date marking system for prepared ready-to-eat (RTE) cooked chicken, sliced tomatoes, and prepared raw beef in the refrigeration unit is not in proper use. No date marking system with time prepared observed. No date marking system with time prepared observed.
- Wet wiping cloth buckets improperly stored.
- Dispensing and/or in-use utensils improperly stored between use as follows: observed ice scoop positioned in ice machine and portioning scoop for rice in large container of ambient temperature water on prep table.
- The nonfood-contact surface of the reach in freezer is not cleaned at an appropriate frequency.

- The person in charge is not able to provide a verbal or written policy for preventing the transmission of foodborne disease by an employee who has a disease or a medical condition.
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- No hand drying provisions were provided at the handwashing sink at both handsinks. Observed broken towel dispenser system.
- The raw animal food on display is stored in a manner that may cause biological cross contamination of to ready-to-eat food (RTE). Observed eggs stored in walk in cooler on second shelf next to raw shrimp.
- Observed no date/time markings on foods in cold holding.
- Observed jar of Vaseline, bottle of Advil, and chemical cleaner on shelf above food preparation area.
- The ambient air and water temperature measuring device that is scaled in Celsius or dually scaled in Celsius and Fahrenheit located in the reach in cooler is missing.
- Unlabeled large bulk food containers with the following food items that are not easily identified by appearance: sugar, salt, cornstarch.
- Observed raw vegetables being stored directly on the floor of the walk in cooler and cases of raw chicken stored directly on the floor of the walk in freezer.
- The light intensity is below 50-foot candles where a food employee is working with food. Observed 11 Fc of light intensity in the food prep area using a light meter.

- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands.
- No hand drying provisions were provided at the handwashing sink in the front of kitchen.
- Unwrapped or uncovered RAW veg. food in the 2 door RIC in kitchen area.
- Raw veg. food (RAW green-beans) stored w/raw animal food and cooked animal food.
- Raw animal food stored over ready-to-eat food in the refrigeration unit. Raw chicken, pork, beef all stored above each other and mixed with each other.
- Equipment used for storage of packaged or open food items was observed with visible accumulations of soil and debris.

- Improper methods used to thaw frozen raw squid.
- Various bulk bins of unidentified powders stored throughout the kitchen without identification label.
- Raw plant foods/canned and bottled goods - observed stored directly in front of bathrooms.
- Wiping cloths improperly used. Sanitizing clothes being used are left on counter and prep-station area.
- Dispensing and/or in-use utensils improperly stored between use as follows: Rice scoop and spoon left in standing water @ 68?.
- Single service items (loose paper-towels) observed unprotected from contamination (stored openly and freely on counter for customers to pick through).
- Wooden table being used next to HS as storage/holding.
- The warewashing machine is not equipped with a device to warn of low sanitizer level.
- There is no data plate on the warewashing machine.
- The insides of the reach in coolers are covered in grease, dirt, grime, various food deposits and other contaminants. Not being cleaned enough for use.
- The @physical facilities@ are not cleaned as often as necessary to keep them clean. Walls and ceilings coated in grease/grime.
- Less than 50 foot candles of light was noted in grill area as well as the mop sink areas. 1.6 - 0.8 respectively.
