Manassas Health Inspections: Olive Garden, Hospital Cafe, Elementary School
An Olive Garden restaurant, a hospital's cafeteria, and a pair of local schools were cited with violations by the health department.
MANASSAS, VA — A restaurant, a hospital cafe, and a pair of local schools received violations during recent visits from the Prince William Health District. The most recently published inspections occurred between Jan. 26 and Feb. 1.
Though some coronavirus restrictions continue to fluctuate around the state, health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Date inspected: Jan. 26
- Total violations: 11
- 1. Employees are not properly maintaining the temperatures of time/temperature control for safety (TCS) foods during cold holding. 2. Employees are not monitoring the cooking temperatures of raw animal food. 3. Employees are not properly sanitizing food contact equipment and utensils. 4. Employee failed to wash his hands after handling soiled equipment/utensils and before handling clean equipment.
- Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the VA food regulations because: the policy need to be updated and food employees need to be trained at least annually.
- A food employee failed to wash his or her hands before handling clean equipment and utensils. (Unloading and removing clean equipment from the dishwasher machine.
- Due to improper operation of the mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning.
- Raw chicken found at 151°F after cooking.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: cooked pasta stored in the refrigerated drawers under the grill and the macaroni and cheese stored in an ice bath.
- The Certified Food Protection manager failed to maintain and provide department records that demonstrate necessary corrective actions were employed if there was a failure at the critical control point. The monitoring temperature and record keeping was missing on multiple reports.
- Employees observed wearing jewelry (watch) on their arms and hands while preparing food.
- The refrigerated drawers under the grill are not working properly (missing the door gasket) and not maintaining proper cold holding temperature of Temperature Control for Safety food (cooked pasta).
- An irreversible registering temperature indicator is not provided.
- The wash temperature of the high temperature sanitizing warewashing machine is not meeting the manufacturer's specifications. The minimum temperature was 149° F, not properly sanitizing food contact equipment and utensils.

- The food-contact equipment surface of the cafeteria cutting board is observed soiled with indented accumulations of soil and debris.
- Tomato soup and rice found at 87°F/ 71°F and 131° was not heated to a sufficient temperature for hot holding.
- Hot holding and reheating equipment is not sufficient in number and capacity to provide proper food temperatures.
