Manassas Restaurant Inspections: 22 Violations At 1 Location
The Prince William Health District visited several restaurants and schools around the Manassas area during recent health inspections.
MANASSAS, VA — The Prince William Health District visited several schools and restaurants around Manassas during its most recent round of inspections. The most recently published inspections occurred between May 18 and May 24.
Many COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Total violations: 2
- Cut tomatoes and cut lettuce found to be cooling in the Traulsen 3 door refrigerator, line 4.
- A direct connection exists between the drain lines of both of the 2 compartment sinks and the sewer system on the entree side of the kitchen.
- Costa Real Restaurant, 8423 Sudley Rd Manassas, VA 20109
- Date inspected: May 19
- Total violations: 22
- Employees are not aware of or are not practicing proper methods to rapidly cool potentially hazardous food (PHF). Employees were no aware of proper handwashing, employees were not aware of practicing not bare hand contact with ready to eat food.
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- A food employee failed to wash their hands before handling clean equipment and utensils after gloved hands were contaminated with soiled equipment and utensils.
- A food employee was observed handling the following ready-to-eat food using their bare hands: fried flour chips.
- Molluscan shellfish (oysters, clams, mussels) obtained from an unapproved source being offered for sale or service. Unable to determine food source, no identification tags on clams.
- The tags for the molluscan shellfish are not available or are discarded immediately after the container is empty.
- There is no written agreement or statement from the supplier or aquaculturist stipulating that the Raw fish (tilapia) served or sold in ready-to-eat form (ceciche), is aquacultured and/or the records are not retained in the food establishment for 90 calendar days beyond the time of service or sale of the fish.
- Using a bowl to dispense food. Food is not protected from cross contamination from soiled or improperly cleaned equipment and utensils.
- Frozen raw animal food (not in original packages) holding in a manner that may cause cross contamination of to ready-to-eat food (RTE) in the chest freezer.
- The food-contact surfaces of the following equipment were not observed sanitized: Inside the ice machine.
- The following equipment food-contact surfaces were observed soiled to sight and touch: cutting boards
- The chicken soup (prep on 5/13/22), green salsa (prep on 5/9/22), rice and beans (prep on 05/12/22) tamales (prep on 5/8/22) in the walk in cooler exceeds the temperature and time combination, does not bear a date or day, and/or is inappropriately marked with a date or day that exceeds the temperature and time combination.
- The following methods used for cooling were not adequate to facilitate cooling of the product from 135°F to 41°F within 6 hours: Deep containers full of cooked ribs in the walk in cooler.
- Raw fish, shrimps, poultry, beef and ready to eat frozen pork were an not thawed properly, in the a food prep sink or on the kitchen counter
- The certified food manager could not provide a food temperature measuring device.
- Food offered for human consumption in a way that misleads or misinforms the consumer: There is an statement on the menu informing consumer that all food is prepare "fresh", however, multiple Ready to Eat food items are cooked or prepared days in advance.
- The following packaged food item(s) is not properly labeled: big salt container.
- Single-service items (plastic containers of butter) were observed reused for the storage of flour and sauces.
- Using grocery bags to store food. Materials found in the construction of utensils or other food contact surfaces of equipment may be causing the migration of harmful substances, colors, odors or tastes to food
- The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: wooden shelving in the warewashing area.
- There is no chemical sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.
- The nonfood-contact surface of the surfaces outside of the ice machine are not cleaned at an appropriate frequency.
- Denny’s Restaurant, 8201 Sudley Rd Manassas, VA 20110

- Total violations: 7
- Raw animal food (unpasteurized shell eggs, stored on the walk in cooler shelf above strawberries - holding in a manner that may cause cross contamination of to ready-to-eat food (RTE).
- The following equipment food-contact surfaces were observed soiled to sight and touch: Cutting board.
- Cut lettuces, deli ham and turkey cold holding at improper temperatures.
- Methods used for cooling cut lettuces were not adequate.
- The following packaged food item(s) is not properly labeled: Sugar in container
- The front serving line refrigerator was not holding proper temperature (41°F).
- The mop sink faucet vacuum breaker is under pressure. A backflow prevention device or airgap not provided on a hose bibb (threaded faucet) at mop sink faucet as required by law.
