Manassas Restaurant Inspections: 22 Violations at One Facility
The Prince William Health District cited more than 20 violations at a facility during a recent restaurant inspection in Manassas.
MANASSAS, VA — A Manassas restaurant recorded more than 20 violations during a recent inspection from the Prince William Health District. Several facilities were cited during inspections between Aug. 10 and Aug. 16.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Poor handwashing procedures observed.
- The person in charge did not demonstrate their knowledge of correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.
- Employees and conditional employees are not aware of the reporting procedures concerning information about their health and activities if they are suspected of causing, or being exposed to a confirmed disease outbreak caused by Typhoid fever (caused by Salmonella Typhi), Salmonella (nontyphodial), Shigella spp., Shiga toxin-producing Escherichia coli, Hepatitis A virus or Norovirus
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- A sign or poster that notifies food employees to wash their hands is not provided in the men's lavatories used by food employees.
- A food employee failed to wash their hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated their hands.
- Water from the handwashing sink at @entrance to kitchen on the right@ was observed at a temperature less than 100°F.
- Insect control device is located over clean dish/utensil storage area where dead insects may be impelled or fall.
- Food stored in a location where it is subject to splash, dust or other contamination as follows: bag of carrots located on floor with top of bag torn open to allow access to carrots.
- Food employees are not wearing clean outer clothing.
- Improper use of wet wiping cloths - wet cloths kept on prep station.
- Clean equipment/utensils were found stored in the same area as large open container of used cooking oil.
- Kolpak walk-in freezer was observed in a state of dis-repair and condition that prevents necessary maintenance and easy cleaning. Ice build-up.
- Hot / Cold water under insufficient or inadequate pressure was found to serve the following equipment: The female toilet room handwashing sink does not have running water.
- The floor drain under the d 3 VAT sink is slow to drain. Waste water overflows out onto the floor requiring a mop.
- The mop sink vacuum breaker under pressure. Splitter being used to run 2 lines through the faucet.
- Condensate drainage and/or other nonsewage liquids including rainwater are not drained and disposed of according to law.
- The premises are not free of litter - cardboard being used as flooring under food prep/cook station.
- The premises are not free of litter - cardboard stacked directly in front of hand sink next to 3VAT sink.
- Observed multiple unnecessary items and litter at the dry storage shelving / area.
- Wet mop is not placed in a position that allows it to air-dry without soiling walls, equipment, or supplies.
- Employees are not using the dressing rooms or lockers provided. Shoes located on office floor, jacket and phone left on boxes of food product.

- Employees and conditional employees are not aware of the reporting procedures concerning information about their health as they relate to the signs and symptoms of foodborne illnesses and exposures.

- Total violations: 9
- There is no person in charge with a valid Food Protection Manager Certification from an accredited agency recognized by the Conference for Food Protection.
- Management, food employees or conditional employees were not aware or informed of their responsibilities in reporting symptoms or diagnosis of diseases transmissable through food.
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Food contact surfaces of the meat slicer and cutting board used in contact with time/temperature control for safety (TCS) food items are not cleaned at the frequency required. Observed food debris and dirt accumulations in/on the equipment.
- Leafy-greens cold holding in the reach in refrigerator at 45°F at improper temperatures.
- There was no temperature measuring device located in the refrigeration/freezer unit.
- Food (oil containers) stored on the floor or food stored less than 6" above the floor.
- Employees observed working in the food service area without proper hair restraints.
- White refrigerator unit found to not to be capable of holding temperature control for safety food (TCS) food items in cold hold in a temperature range of 41-45°F. Unit is not able to maintain internal items at a temperature of 41°F or less. Refrigerator recorded ambient temperature 47°F.
