McLean Restaurant Inspections: Marhaba, California Pizza Kitchen
During a recent inspection, a Fairfax County Health Department inspector found four violations at Marhaba Restaurant in McLean.
MCLEAN, VA — As the Fairfax County Health Department regularly inspects restaurants in the McLean area, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

Violations of Good Retail Practices:
- Plant food was not properly cooked for hot holding.
- Warewashing facilities; installed, maintained and used were out of compliance.
Additional Observation:
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions at the 3-compartment sink. Corrective Action: Obtain an appropriate test kit for the provided chemical sanitizer at the 3-compartment sink.

- Person in charge was not present to demonstrate knowledge and perform duties.
- Improper cooling time and temperature used. : Based on a discussion with the PIC/CFM, food employees are not inspecting the food upon receipt to verify proper temperature and intact packaging.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: cut lettuce, sliced tomatoes, yogurt observed at 48F in 1 door prep refrigerator.
Violations of Good Retail Practice:
- The following cooked time/temperature control for safety food(s) are not being adequately cooled from 135F to 70F within two hours and to 41F within a total of six hours: Cooked white rice (68-72F), cooked yellow rice (70-73F) observed in large batches, with lids on, in the Walk-in prepared 6 hours prior to inspection.
- Unapproved thawing methods used. Reduced Oxygen Packaged tilapia observed fully thawed in the 2 Dr prep refrigerator.
- Warewashing facilities; installed, maintained and used were out of compliance.
- Physical facilities installed, maintained, and clean. Observed that the 1 Dr prep refrigerator is not maintained in good repair; it is holding at 48F.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
