Unclean Surfaces, Debris In Ice Machine: McLean Health Inspections
During recent inspections, Fairfax County Health Department inspectors reported finding health code violations at two McLean restaurants.
MCLEAN, VA — As the Fairfax County Health Department regularly inspects restaurants in the McLean area, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

- The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: Spinach (87F) and eggplant (91F) observed in steam well.
- A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands. Employee observed blowing air into plastic glove to enlarge before putting on hand and engaging in food prep.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device:
-milk gallon (45F) and chutney (47F) observed in 3 Dr Hobart UR - The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without proper disclosure: Bistro Grill Mix and Mix Grill Maza.
- The following methods used for cooling were not adequate to facilitate proper cooling: Soup observed cooling with ice only coating the bottom of the container.
- Observed that the wall next to the mop sink is not maintained in good repair.
- The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: 3 Dr Hobart UR observed at 52F.
- A plumbing system shall be maintained in good repair. Provide EHS with proof of repair.
- Surfaces of ice bins, beverage dispensing nozzles, and enclosed components of equipment are not being cleaned as required. Interior of bar ice machine observed with accumulation of debris.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: 2% milk (43F) was stored in dispenser for about 10 minutes.
- The following refrigerated, ready-to-eat, time/temperature control for safety food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked: Shredded cheddar cheese.
