Vienna Restaurant Cited For 10 Violations During Inspection

Health inspectors noted undated foods and lack of a sneeze guard among other violations at one place.

Ever wonder how clear your local restaurants are? Fairfax County restaurants regularly undergo health inspections, with the frequency depending on the type of food served and how it is prepared. While violations like malfunctioning refrigerators and food that's not warm or cold enough often pop up, health inspectors sometimes find more critical violations.

"In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," notes the Virginia Department of Health.

Here are full results for the latest inspections around Vienna and Oakton, including restaurants that passed with no violations. Of note, Shin Se Kai had nine violations. Six of these violations were corrected during the inspection. Click on the violations to see each restaurant's results. violations: The exterior surfaces of the deep fryers and pother cooking equipment had accumulations of crusted grease and debris, opening to the exterior of the building is present along the base of the back door to the kitchen, bases of the walls in the kitchen and storage areas are in good disrepair or damaged, surfaces of the shelving and walls inside the walk-in cooler are in need of cleaning

Oakton Chesapeake Cafe: 2952-D Chain Bridge Road, Oakton, VA 22124, last inspection: March 22

violations: food being held for more than the specified time/temperature allowed: tuna salad, chicken salad, egg salad, a variety of cream, cheeses, water cooler was stored in the hand sink at the serving station, concentration of the chlorine sanitizer solution in wet towel container was measured at over 400 ppm (all corrected), food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked: a variety of cream cheeses, chicken salad, egg salad, tuna salad, handsink at the back work area was being used to wash small utensils such as knives and spatulas

violations: The existing sneeze guard is removed from this facility leading the food contact surfaces (all the bowls, containers) to exposed to environmental contamination, methods used for cooling were not adequate to facilitate proper cooling: The cooked bulk (thick portion) steak was cooked and portioned in tight plastic and place it on the room temperature during cooling, food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Pork, Tofu, Ground Chicken (45F, 44F, 44F) in Avantaco 2-DR UC #4, Hash brown (62F) in Avantaco 1-DR Prep #1, and Cooked Kimchi (47F) in Walk-in, food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: Half Boiled Egg, Cooked Pork, Cooked Chicken, person in charge is not able to provide written procedures for the use of time as a public health control with the following potentially hazardous food item(s): Sliced Chicken, Cooked Ground Chicken, Sliced Pork, and noodles at the prep line, hand soap was not provided at each handwashing sink, paper towels were not provided at each handwashing sink (all corrected), food is packaged using a cook-chill process, but the food establishment has not implemented a HACCP plan: Chicken in ziplock bag, no consumer advisory for the following food item(s) that may be served raw and/or undercooked: Sushi items, Half Boiled egg, and poke items, raw and/or undercooked foods are provided on the menu or brochure without proper disclosure: Raw Sushi, Poke, Half Boiled Egg
