Vienna Restaurant Inspections: Maple Room, YamaChen Sushi

During January inspections by the Fairfax County Health Department, Vienna restaurants had as many as eight violations.

VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.

The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.

Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

This week's report focuses on January reports around the Town of Vienna. Of note, the Maple Room had eight violations and Sunflower Vegetarian, YamaChen Sushi, and Yama Japanese Restaurant each had six violations. Click on each link to see full reports for each restaurant.

Violations:

  • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: protein soys = 57F, 47F, Fried Tofu=47F, fried potato=43F, chick peas=51F, Veggie Gen Tso = 51F.
  • The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: sauces.
  • The waste storage /dumpster including the cardboard recycling container are not maintained in good in repair. Both containers are leaning as well.
  • Trash and litter were observed adjacent to the refuse container outside the facility.
  • The stainless steel wall covering at the base kitchen hood system cooking surface area is not smooth and easily cleanable.
  • Observed that the wire shelving and the ceiling inside the walk-in refrigerators are in need of cleaning.

  • The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: 1) MASHED POTATOES OBSERVED AT 127F, 2) CREAMED SPINACH OBSERVED AT 124F IN STEAM TABLES OR STEAM BATHS (SOMETIMES DOUBLE PANNED).
  • The following cooked time/temperature control for safety food(s) are not being adequately cooled from 135F to 70F within two hours: 1) ONION SOUP OBSERVED IN THE WALK-IN COOLER, COVERED AT 74F-84F AFTER 2 HOURS OR MORE.
  • Observed the bar handsink being used for dumping.
  • The following food item(s) for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control: 1) UNSALTED, WHIPPED BUTTER, 2) FRIED KALE, 3) COOKED FRUITS, 4) BEEF WELLINGTON, 5) BERNAISE SAUCE
  • The following methods used for cooling were not adequate to facilitate proper cooling: 1) LARGE 5 GALLON CONTAINERS OF ONION SOUP WERE OBSERVED COVERED IN THE WALK-IN REFRIGERATOR, 2) COOKED BEEF IN A GRAVY WERE OBSERVED IN A DEEP PAN AND COVERED WITH ALUMINUM FOIL
  • The dial type food measuring devices were found out of calibration in the range of use. Observed food thermometers reading anything from 32f to 34f to 40f in the ice water bath.
  • Observed employee restroom doors not provided with self-closing door hinges.
  • Dispensing and/or in-use utensils improperly stored between use as follows: 1) ICE CREAM TYPE SCOOP OBSERVED STORED IN A CONTAINER OF STANDING WATER AT ROOM TEMPERATURE.

Social Burger: 350 Maple Ave., Vienna, Va 22180

  • Observed that hand soap was not provided at the kitchen handwashing sink.

Yama Japanese Restaurant: 328 Maple Ave., Vienna, Va 22180

Violations:

  • Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: Raw chicken and raw fish were observed stored above vegetables abs noodles, inside refrigerators.
  • The following equipment/utensils were observed soiled to sight and touch: The interior surfaces of the reach-in freezers were soiled and in need of cleaning.
  • The certified food manager could not provide a food temperature measuring device.
  • Observed the handsink at the kitchen being used laundering wiping cloth.
  • Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
  • Observed that items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises. these toxic chemicals that are not necessary for the operation of the restaurant were noted on premises : Mobil Oil, PRESTONE Antifreeze, TOYOTA 50/50, SPLASH coolant.

YamaChen Sushi: 320 Maple Ave., Vienna, Va 22180

  • The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device:mp tempura =66F, crazy Volcano Rolls=64F.
  • A review of the menu with the food service operator indicates that there is no consumer advisory for the following food item(s) that may be served raw and/or undercooked: sushi salmon, sushi tuna, pacify tuna and spicy salmon.
  • The food establishment does not have written procedures for employees to follow when responding to vomiting or diarrheal events.
  • Observed the following food thawing using an improper method: frozen Volcano tuna rolls stored at room temperature to thaw with no visible temperature control.
  • Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
  • Observed that the metal cover on the grease trap located under the3-compartment sink is not in good repair.

  • The hot water faucet at the 3-compartment sink is not operating properly. The piping below the hand sink at the salad preparation station, leaks.
