Vienna Restaurant Inspections: Rodent Droppings, Eatery's 13 Violations
During recent inspections by health inspectors, Vienna restaurants violations like rodent droppings and food handling without gloves.
VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

This week's report focuses on April and May reports around the Town of Vienna. Click on each link to see full reports for each restaurant. Of note, the Virginian was found with rodent droppings in a dry storage area. Inspectors recommended filling or closing gaps in floors, walls, and ceilings to prevent the entry of insects and rodents. The most violations during recent inspections were 13 at Z Burger.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: chunks of vegan/soy chicken =45, 46, 47F.
- The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: different soys and sauces.

- Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: raw ground beef, raw chicken were observed stored above bread and other ready-to-eat foods inside refrigerators.
- The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without proper disclosure: Burgers, Traditional Benedict, Florentine Benedict, sausage Benedict, smoked salmon Benedict, Bacon Benedict.
- There is no Certified Food Manager present at the beginning of the inspection.
- The handwashing facility located at the warehouse washing station is being used for storage and broken, preventing access by employees for easy handwashing.
- There is no test kit located in the facility for monitoring the concentration of the chemical (bleach) sanitizing solutions.
- Employees are not properly trained in food safety, as it relates to their assigned duties on operating the 3-compartment sink when cleaning utensils and equipment.
- Working containers of poisonous and toxic materials are not properly labeled with a common name. Unmarked spray bottles containing toxic chemical solutions were not labeled.
- Plumbing connections under the hand washing sink that is located at the warehouse. Washing station is broken leaving the hand sinks unusable. The piping under this sink has separated completely.
- Milk crate(s) found used for the following purpose(s): As storage racks to elevate food supplies off the floor.
- Front and side doors were kept open for ventilation and they were not protected by a screen or other effective means.
- The following food items that are not easily identified by appearance were observed without a label: Powered food items on the shake flare top were not properly labeled to identified products.
- Absence of no smoking signs or international signs in non-smoking area.

- Observed that the floor under cooking equipment at the hood system is in need of cleaning. Grease accumulation was noted in this area.

- Observed that the floor and walls inside the walk-in refrigerator and freezer are in need of cleaning.
- Harborage conditions exist. Floors and walls are in need of cleaning. Floors are wet and floor drains at the dish washing machine station and under other equipment are need of cleaning. Unnecessary items cluttering the facility.

- Employees are not properly sanitizing cleaned multiuse equipment and utensils before they are reused. An employee was observed cleaning utensils at the 3-compartment sink without sanitizing after washing and rinsing them.

- Observed the handsink at the front serving /Sushi prep station was being used for the storage of utensils. The sink was noted to be filled with containers.
- Observed that the floor inside the walk-in refrigerator and under the dish washing machine is in need of cleaning.
- Dispensing and/or in-use utensils improperly stored between use as follows: Ice scoop place on ice in the ice machine with the handle on the ice. The rice spatula placed on the rice in the rice warmer with the handle on the rice.

- The establishment has not posted the permit to operate in a conspicuous location. The permit was posted on a back wall where it could not be easily seen by customers.
- Outside refuse container was uncovered. The dumpsters were observed to be opened. Te top lid was up.
