Vienna Restaurant Inspections: Soiled Fridges, Improper Pesticides

VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.

The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.

Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

• The following equipment/utensils were observed soiled to sight and touch: Surfaces of the can opener blade were noted to be soiled and in need of cleaning.

• The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Risotto= 44F, cooked shredded celery-carrot mix=50f, cooked spinach=49F.
• When tested, the chlorine-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the Glassware machine at the bar with a concentration of zero ppm total chlorine.

• Restricted use pesticides do not meet the requirements in 40 CFR 152 Subpart 1 Classification of Pesticides. Pesticides intended for home use were noted in a cabinet at the bar.
• Observed the handsink at the bar being used for dumping and other purposes.
• The interior surfaces of the two-door upright refrigerator located across from the ice machine, were noted to be soiled and in need of cleaning.
