Venerable Seattle Restaurant Closing, Will Throw New Year's Party First

Sazerac will close after 20 years to re-brand with a tentative reopening scheduled for March.

SEATTLE, WA - Longtime downtown Seattle restaurant Sazerac will serve its last meal on Dec. 31. The 20-year-old southern-themed mainstay is closing for a re-brand.

Few details are known about what Sazerac will become, but the restaurant's owners told Eater Seattle that the new restaurant will feature "simple, seasonal fare perfect for sharing." The new restaurant sounds like it may have an Italian theme, with the owners saying that the new concept will feature a brick oven and pasta dishes.

The restaurant has operated with a creole theme since opening in the 1990s inside the Hotel Monaco along 4th Avenue. Original Sazerac chef Jan Birnbaum trained with chef Paul Prudhomme.
