It's the second time in a year that the restaurant in Cartersville has received a failing score.

  • Observed food uncovered exposed to contamination. CA: Discussed with PIC about having all food that is not in use covered at all times. COS by PIC.
  • Observed ready to eat food not date marked for 7 days discard. CA: Date mark with a 7 day discard with day 1 being the day of preparation.
  • Observed shrimp being prepped in dishwashing 3 compartment sink on dish was side instead of meat prep sink. CA: Discussed with PIC about meat preparation sink use.Observed food equipment stored less than six inches from the floor.
  • Observed no hand washing sign posted in restroom.
  • Observed glasses, equipment, and utensils not properly air-dried. PANS WET STACKED. CA: Discussed proper air drying with PIC.
  • Observed employee cell phones and chargers in kitchen, prep, and serving area stored with and over food/clean dishes. CA: Discussed with PIC to keep cellphones and charges in separate area and discussed when to wash (Hand washing procedures).

  • Observed employee bags in kitchen(prep) area. CA: Discussed with PIC to keep bag in separate area.
  • Observed gnats, flies, and ants in kitchen area. CA: Discussed with PIC about regular cleaning and pest control.

  • Certified Food Safety Manager does not demonstrate profienciecy in active mangerial control measures... Recommend being trained or retrained in proper Food Service Managerial Control.
  • Observed personal open beverage container on a food preparation table and throughout the kitchen. Drinks were discarded or relocated...
  • Observed food items (condiments) stored mixed in with facility supplies (tools, replacement lights, etc...) Condiments were relocated.
  • Observed cut potatoes sitting on a lower shelf next to the three compartment sink that was mixed in with bleach storage, sanitizer bucket, other can goods etc. Potatoes were relocated.
  • Observed raw chicken adjacent to boxes of lettuce in the walk in cooler. Lettuce was relocated.
  • Observed foods uncovered and had other pans of food “nesting” and actually sitting in the foods in the lower pans. Lower foods were discarded.
  • Food contact surfaces throughout the kitchen had waste foods/spilled foods on them and need to be cleaned and sanitized. Areas were pointed out to the PIC during the inspection.
  • Observed foods stored in the walk in cooler that were held above the maximum cold holding temperature of 41F. See temps above. Foods were discarded.
  • Observed creamer (half and half) stored at the waiters station that was marked as “Keep Refrigerated” holding at 56F.
  • Observed chicken held on the hot bar less than the required minimum of 135F. See temps above. Chicken was discarded.
  • Observed foods stored in the walk in cooler that according to the PIC were mis-dated according to the date mark on the container.
  • Observed squirt bottles of unknown liquid that were not properly labeled with the name of the contents. All bottles are to be labeled with the contents inside.
  • Observed wiping cloth sanitizer not at minimum strength. PIC remade sanitizer to proper levels. Also observed several wiping cloths sitting on table tops rather than being stored in sanitizer
  • Observed the exterior of the ice bin dirty with food debris that could fall into the ice bin. Need to clean and sanitize the ice bin.
  • Observed several areas missing tiles, dry storage had holes in sheetrock. Floors had lots of standing water and food debris on them that needed to be cleaned up and sanitized properly. Alleviate all standing water in the kitchen area.
  • A follow-up inspection is scheduled for June 16.
