Observations: Employee touched his cell phone, touched the trash can and then opened a can of food with the can opener; he didn’t wash his hands. Employee touched the trash can and then scooped rice into a food container; he didn’t wash his hands. Multiple employees repeatedly washed their hands for <20 seconds. Training provided. Multiple employees washed their hands in the vegetable prep sink. Training provided; employees washed their hands in the hand sink. Raw chicken on trays stored on cart directly above plastic wrap; raw chicken juices were dripping onto the cart, plastic wrap and floor below. Plastic wrap discarded; chicken moved into deep, plastic food containers that can hold the dripping chicken juices. Dishes sanitized in quat sanitizer solution, for <60 second contact time, in the dish sink. Chicken not cooled to 41F within a total of 6 hours. Chicken cooling in deep, covered, plastic containers, stacked 2 containers high in the walkin cooler. PIC stated the chicken is supposed to be cooled on sheet pans, then placed into the plastic food containers and stored in the walkin freezer. Food discarded because it was cooling >6 hours. Multiple foods (smoked salmon, vegetables, etc) stored in direct contact with paper towel and cloth napkins in stored food containers.

Remarks: FRYER CLEANER WAS ON TOP OF THE EXHAUST HOOD OVER THE FRYERS WHERE FOOD WAS BEING COOKED. KEEP FRYER CLEANER STORED WITH OTHER CLEANERS IN A SEPARATE PLACE AWAY FROM FOOD AND FOOD CONTACT SURFACES.
