Observations: Cooked potentially hazardous foods not cooled from 135F to 41F within a total of 6 hours: stew cooling since night before at 50 deg. F. It was discarded. Squash, mac and cheese, baked beans cooling on top section (shelf) of stove. Items covered. Stew cooling in large pot (covered) in walk in cooler since night before. Squash vented, moved to freezer, but then reheated. Mac and cheese split into thinner portions, moved to freezer, vented, but then reheated. Baked beans vented, split into thinner portions, moved to freezer. Baked beans discarded.

F at two handwashing sinks: by fryers and by warewashing sink. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100ºF

Observations: Facility purchasing pizza from Cooley’s Pizza and reserving to staff and students. Cooley’s Pizza does not have a food processor’s license through Department of Agriculture that allows for their product to be re-sold and served at separately permitted food service establishments. Pizza served by end of meal period. Leftover pizza to be discarded. Two bottles of wasp killer stored with crock pot, canned pickles, & bag of popcorn. Wasp killer relocated to approved location outside of permitted food service establishment. Three unapproved containers of pesticide stored in permitted establishment. Reusing single use containers (e.g., BBQ, ricotta cheese containers, etc.). No QUAT test strips for QUAT sanitizer.
