Multiple potentially hazardous foods cold holding above 41 F (no time control documentation).

Foods actively cooling in deep pans with tight fitting lids/coverings. PIC placed foods to rapid cool in shallow pans/trays with loose coverings in the walk-in cooler. Victory 2-dr reach-in cooler with ambient air temperature of 53 F. Unit will not be used until repaired. A follow-up inspection will be conducted within the next 10 days.

Remarks: Observed employee handle ready to eat carrots with bare hands. Observed employee food stored directly on top of the in-use prep table. Food was removed and discarded. Observed Raid Ant and Roach spray stored in the storage area. Spray was discarded. Residential pest control shall not be used in a commercial establishment. Observed in-use wet wiping cloths stored in chlorine sanitizer solution with a concentration of 0 ppm. Chlorine sanitizer solution was remade to the proper strength (100 ppm). Observed live roaches on the handsink.
