Remarks: Observed a large container of mashed potatoes cooling in the walk in cooler over 2 hrs with a temperature above 70F. The potatoes are baked then mixed with other ingredients. After second temperature check, the potatoes did not reach the appropriate cooling time. Cooked potentially hazardous foods shall be cooled from 135F to 70F within 2 hrs.
