In Season from the Farmer's Market: Peaches

Eating produce when it is in season helps you get the most nutritional value and enjoy the best flavor.

Choosing to eat foods that are in season will allow the consumer to enjoy the best flavor of the item and get the most nutritional value from the item. Kensington's Farmer's Market offers in season produce and local farmers will share their wealth of knowledge about what's in season, what's on its way out, and what will be replacing the item.

Rabbit Hill Farm has been a vendor at the Farmer's market for 18 years, and owner and full-time farmer John Hilker helps residents learn more about the produce and fruit they are purchasing.

"Peaches and Nectarines are in season," Hilker said. "But they'll be finishing up soon. Next weekend might be the last for the peaches."

Several market people asked about what items they should be buying now and if the peaches will still be available next week. Hilker pointed out that apples are now starting to be in season, and that the Honey Crisp apples, which he just started selling again, will be replacing the peaches.

Honey Crisp apples are best for snacking, Hilker said. But they can also be used to make apple strudel and apple crisp, because of the tartness. Additionally, the peaches can be eaten as is, but can be made in to cobbler, used to top salads or try something a little different like a peach salsa.

Peach Salsa Ingredients:

2 peaches, pealed and diced
1 avocado, diced
2 tomatoes, seeded and diced
1/4 cup red onion, chopped
1 tbl of fresh lime juice
1 tbl chopped cilantro
Add salt and pepper to taste
(For spicier salsa, add 1 tbl of minced jalapeno.)

Combine and mix the ingredients, cover and chill for about four hours.

*Makes about 3 cups.
