
A new Mexican restaurant on the Morris Plains/Parsippany border will offer “dollar burrito night” on Wednesday, Feb. 15 from 4 to 6 p.m. and a remote from 105.5 WDHA radio.
The new Panchero’s Mexican Grill is at 1767 Route 10 and is owned by five friends and business partners.
Jagat Parikh and his partners own eight convenience stores, but wanted to do something different as well, he said. Parikh worked in the restaurant business before and considers himself something of a “foodie.” He tried food at a Panchero’s franchise in south Jersey and liked it so much he wanted to bring one in to Northern New Jersey. He would like to open more, too.

The other partners are Ketul Shah, Pranav Shah, Pradip Desai and Jatin Shah.
The Panchero’s franchises are known for made-to-order burritos, quesadillas, tacos, burrito bowls and salads, homemade salsas, guacamole and queso, according to a press release from Caitlin Varley of Sanderson and Associates, the Chicago public relations firm that represents the company.

Varley’s release said the meats include grilled sirloin, steak, chili-tamarind chicken and camitas that are marinated and trimmed in-house. The company prides itself on having no microwaves, fryers or freezers in the franchises.
Pacheros were started in 1992 in East Lansing, Mich., and Iowa City, Iowa and became popular with college students for oversized skirt-steak burritos. In order to attract other than college students, the menu was changed and the homemade tortillas were started, the release said.
There are now 50 franchises in 17 states.
