Arlington Restaurant Critical Violations: Poorly Stored Pasta, Sanitary Problems

ARLINGTON, VA — Arlington County regularly conducts inspections of local restaurants. Reports are generally posted about a week after the inspection. We've listed the critical violations from inspections at Arlington restaurants on April 20, the most recent date available.
Atlacatl Restaurant, 4701 Columbia Pike

Critical Violation No. 1: Observation (CORRECTED DURING INSPECTION): Observed various foods in the prep unit on the cookline cold holding at improper temperatures (cheese/pork papusa mix 68 F, cut leafy greens 50 F, cut tomatoes 50 F, cheese 54 F, guacamole 49 F, salsa 50 F). Food was discarded.
Critical Violation No. 2: Observation (CORRECTED DURING INSPECTION): Utensils and food-contact surfaces of equipment were not sanitized after cleaning. when tested, no sanitizer was being distributed in the dish machine. Corrected by setting up three compartment sink.

Critical Violations: 4
Critical Violation No. 1: Observation: Ice used as a medium for cooling the exterior surfaces of food is also used as food. Observed canned juice beverages stored in ice which is used for beverages.
Critical Violation No. 2: Observation (CORRECTED DURING INSPECTION): Various foods in the cookline prep unit (middle) were observed cold holding at improper temperatures (cheese 51 F, butter 50 F, cooked mushrooms 47 F). Foods were discarded.
Critical Violation No. 3: Observation (CORRECTED DURING INSPECTION): Observed foods in the walk-in cooler that is inappropriately marked with a date or day that exceeds the temperature and time combination.
Critical Violation No. 4: Observation (CORRECTED DURING INSPECTION): The food establishment is not under the immediate control of a Northern Virginia certified food manager. Certified Food manager arrived during inspection.
Cafe Italia I, 519 S 23rd St

Critical Violations: 1
Critical Violation No. 1: Observation (CORRECTED DURING INSPECTION): Two large bulk containers of cooked pasta in the basement reach-in cooler with a preparation date of 4/19/17 were observed cooled improperly. The cooked pasta measured 54'F and 51'F respectfully. The person in charge voluntarily discarded the food.

Critical Violation No. 1: Observation (REPEAT): Facility not observed under the control of a Northern VA certified food manager.

Critical Violation No. 1: Observation (CORRECTED DURING INSPECTION): Several food containers inside the walk-in cooling unit exceeds the expiration time written on the containers, discarded.
Critical Violation No. 2: Observation: The dishwashing machine does not reach an internal temperature of 160 F or higher, call for service.
