Manassas Restaurant Inspections: Violations at 4 Locations

The Prince William County Health Department found violations at four restaurants in Manassas during recent routine inspections.

MANASSAS, VA — Officials from the Prince William County Health Department inspected several restaurants in the Manassas area during routine inspections from Sept. 8 to Sept. 14. Four locations had violations that needed to be addressed, according to inspectors.

Though some coronavirus restrictions are returning around the state, health inspectors are returning to conduct many restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

    • Date inspected: Sept. 8
    • Total violations: 6
      • Food stored on the floor or food stored less than 6" above the floor in the walk-in refrigerator.
      • Unlabeled food containers with the following food items that are not easily identified by appearance: sugar
      • There was no temperature measuring device located in the front reach-in refrigeration unit.
      • Spray bottle of cleaner not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.

    • Date inspected: Sept. 8
    • Total violations: 11
      • The person in charge is not able to provide a verbal or written policy for preventing the transmission of foodborne disease by an employee who has a disease or a medical condition.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • In use open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils.
      • The following cooked potentially hazardous food(s) are not being adequately cooled from 135°F to 70°F within two hours and to 41°F within a total of six hours: red beans; rice
      • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: raw chicken and raw beef at 44 degrees F.
      • Observed can of "Raid" stored by clean equipment. Pesticides are not being applied by a certified applicator.
      • Working containers of poisonous and toxic materials are not properly labeled with a common name.

      • Management, food employees or conditional employees were not aware or informed of their responsibilities in reporting symptoms or diagnosis of diseases transmissible through food.
      • This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • A food employee failed to wash his or her hands before putting on gloves and engaging in food preparation.
      • Raw animal food stored over ready-to-eat food in the refrigeration unit (raw eggs over raw vegetables). Raw animal foods not stored based upon minimum cook temperatures (raw chicken stored over raw pork).
      • The following food item(s) on the hot holding display unit were measured at improper temperatures: pork belly, 96 degrees F; fried ground beef patty, 103 degrees F; shrimp with veggies, 122 degrees F.
      • Poisonous or toxic materials found stored or displayed with food, equipment, linens or single service items in such a way as to contaminate items. (Soap/cleaners stored above foods and single service items in store room.)
      • Unlabeled dry goods bulk food containers.
      • Food stored on the floor or food stored less than 6" above the floor.
      • Dispensing and/or in-use utensils (rice scoop) improperly stored in water in between use. Bowls used as scoops in bulk containers.
      • Unwrapped knives, forks, or spoons were not stored with the handles up.

    • Total violations: 10
      • Food employees are not informed of their responsibility to report to the person in charge information concerning their health and activities as they relate to diseases transmitted through food.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • No waste receptacle provided at handwashing lavatories in kitchen, food preparation and cooking areas.
      • Water from the handwashing sink at cook line was measured at a temperature less than 100°F.
      • The fried chicken wings and the boneless chicken in the hot holding unit at 133°F; hot holding at improper temperatures.
      • Single-service and/or single-use articles (napkins) are stored uncovered next to a prep sink in the bar area.
      • There is no test kit located in the facility for monitoring the concentration of the chemical (QUAT) sanitizing solution at the 3 compartment sink.
      • The handwashing sink faucets at all handwashing sinks in the kitchen (cooking line, prep and warewashing) area are not in good repairs, the faucets are missing the hot water handle.
      • The walk in freezer door heat strip not working properly, there is accumulation of ice around the door. In addition, there is ice buildup on the floor and walls; not maintained in good repair
      • Observed accumulation of water on the kitchen floor around the ice machine, the water heater and the bar areas; are in need of cleaning.
