Potentially hazardous foods in the upper portion of the pizza and salad prep coolers are holding above 41F. The establishment is using time as a public health control for pizza sauce without written documentation provided. The container of pizza sauce was did not bear any time control marking. Lasagna and sausages were placed on the counter to thaw.

Facility has approved variance in regards to pizza sauce being held at ambient room temperature for 24 hours but not to exceed 77F. Facility shall conform to approved procedures and follow requirements within procedure. Employee wearing jewelry (bracelet) other than a plain ring while preparing food.
