Ultra-marathon runner fuels up on Liberty Dining options

Ultra-marathon runner Dominique Rose doesn’t just work on campus. He fuels up on campus.

Rose, who runs long distance marathons to raise money for charitable causes, is a retail manager for Liberty University Dining by Sodexo. He is proof that positive health and wellness are at the forefront of campus dining options.

“My nutrition consists of eating over 200 grams of protein, close to 150 healthy carbs, and two gallons of water daily,” said Rose. “I followed this faithfully since I was twenty years old, and it’s paid off tremendously.”

On campus, Rose’s favorite dishes from Sodexo brand concepts include any create-your-own-salad from Farmer’s Field, any smoothie from Natural! with whey protein, or a healthy protein from Fresh Market.

“I’m excited for Shake Smart because of the different protein options and the whey protein they carry has 3x the amount of what we currently have at Natural!,” said Rose.

Shake Smart will open later this month at Liberty University. The concept was started by two college students who found it difficult to find healthy options while living the college on-the-go lifestyle. The vision was to make healthy eating more accessible and to have a balance of nutrients focusing specifically on protein on-the-go.

Rose has been running marathons to raise money for nonprofits since his own college days.

“My most recent race was the Richmond Marathon in November 2021,” said Rose. “My next race is the Charlottesville Marathon on April 9 and my next 50K ultra-marathon is this June.”

He also will be completing a 4x4x48 this May for Cancer awareness. This consists of running four miles every four hours for forty-eight hours straight.

“My old college roommates and I have done this for the past 6 years,” said Rose. “I got into running long distance by doing the 4x4x48, created by ultra-runner David Goggins who raises money for fallen special ops soldiers.”

“I figured if I could run forty-eight miles in two days, I can complete an ultra,” Rose said.
