Sodexo at Liberty U brings fresh produce stands to campus

Each semester, Liberty University Dining Services by Sodexo features three produce stands at which students can use Flames Cash, Dining Dollars, cash, or credit/debit cards for farm fresh and local, homemade goods.

“Everyone is definitely excited to have fresh produce and homemade goods on campus, especially since we’re able to accept student meal plan tenders making healthy choices affordable,” said Marketing Manager Shelby Burton. “When students realize that the stands accept Flames Cash and Dining Dollars, they stop in their tracks and grab snacks for later.”

Students are frequently surveyed by the dining team to find out what homemade products and produce are in highest demand.

Sodexo District Chef Sarah Falls or Catering Executive Chef Barry Spence attend these events to provide a tasty, boxed lunch option.

Chef Spence most recently created a loaded cauliflower chowder with a honey butter brushed jalapeno muffin.

“The produce stands provide an opportunity to create something delicious and fun that students love, while forwarding our dietitian’s mission to promote healthier eating on campus,” said Chef Falls.

In the winter months, the produce stands are held indoors. During warmer weather, the events are outdoors with an authentic farmers market feel.

“The produce stand is one of the many ways we encourage students to use their dining dollars in a healthful way,” said Resident Dietitian Rachel Sanders. “We’ve heard many students miss having whole fruits and vegetables in their dorm rooms, so the produce stand means access to fresh produce throughout the semester using their meal plans.”
